1 1/2 c sugar
1 1/2 c margarine, softened
4 c flour
4 tsp baking powder
1 tsp salt
1 c chopped walnuts
2 eggs
1 tsp orange extract (it calls for vanilla, but I like orange)
2 c mashed canned carrots or you can make your own from scratch
Frosting:
8 oz cream cheese
1/4 c butter, softened
1 tsp orange extract (or vanilla)
1 1/2 - 2 c confectionery sugar

Directions:
Directions:
Cream together margarine, sugar, eggs, and 1 tsp orange extract. Add mashed carrots & mix well. Add flour, baking powder, salt and chopped walnuts. Stir well. Drop by tsp on greased cookie sheet. Cool on wire rack.

Mix cream cheese, butter, confectionery sugar, orange extract. Frost cookies when cooled. I usually top cookies with a little walnut piece or some festive orange or Fall sprinkles!! Soooo festive!!!
