2 oz. unsweetened chocolate, chopped
1/2 cup sifted cake flour
2 T. unsweetened cocoa
1* tsp. salt
2 1/2 cups lightly packed flaked sweetened coconut
1 tsp. vanilla extract
1 (14 oz.) can fat-free sweetened condensed milk

Directions:

Line a large baking sheet with parchment paper; secure with masking tape. Place the chopped, unsweetened chocolate in a small microwave-safe bowl. Microwave on high for 1 minute or until almost melted. Remove from microwave and stir until chocolate is completely melted. Spoon flour into a dry measuring cup; level with a knife. Combine flour, cocoa, and salt in a large bowl. Add coconut and toss well. Stir in melted chocolate, vanilla and milk. Drop by level tablespoons 2 inches apart onto prepared baking sheet. Bake at 250º for 45 min. or until edges of cookies are firm and centers are soft., rotating baking sheet once during baking. Remove from oven; cool 10 minutes on pan on a wire rack. Remove cookies from parchment paper; cool completely on racks. Store in airtight container.
