9 oz. couscous
1 c. cold water
1 red bell pepper
1 bunch asparagus, trimmed and peeled
1 zucchini sliced
1 bunch green onions, sliced
1 can mini corns, cut in half
Fresh mixed herbs - basil and cilantro
salt
pepper
red wine vinegar

Dressing:
2 T. lemon juice
5 T. olive oil
salt and pepper to taste

Place dry couscous in bowl w/ water. The couscous will soak up the water in about 10 mintues. Meanwhile, blacken peppers over gas of stove (or in oven). Chop in bite sized pieces once blacked, discard seeds. Lightly cook the zucchini and asparagus in pan with a little oil. Toss all the vegetables with couscous. Pour dressing over top and toss well. Taste and season with salt, pepper, and red wine vinegar to taste. (I use quite a bit of red wine vinegar).

Our friends from S. Africa made this recipe for a BBQ (brai in S. Africa) while we were all living in England. This makes a wonderful, light summer dish!
