1 1/2 lbs red-skinned potatoes
1 t salt, or according to taste
3 T butter
3 T mayonnaise, preferably McCormick's with lime (limon')
3 T grated Cotija cheese (or your favorite sharp white cheese...even Parmesan with work)
About 2 roasted, peeled, chopped Hatch green chilies (or small can in a pinch)
dash of black pepper

Cook potatoes in an inch or two of water till tender...not mushy. Drain potatoes. Add butter and smash roughly with your grandmother's potato masher if you still have it...or the back of a wooden spoon. Add mayo, cheese, and chilies....and touch of pepper.

If you love green chilies, you'll love this dish...nothing interferes with that wonderful Hatch flavor. Just in case you havn't prepped chilies before...the best way is broil till skin is black and blistered on both sides...then cover with a wet paper towel and let steam awhile...then peel and discard skin, remove seeds and stem, and chop...or leave whole for rellenos.
