1/2 cup chopped stuffed green olives
1/2 cup black olives pitted
1 cup chopped pickled vegetables or 1 cup chopped celery
1/4 cup minced parsley
1/2 cup olive oil
3 tbsp lemon juice
1 garlic clove crushed
1 tsp oregano
fresh pepper
1 10" round Italian loaf split
1/2 lb thinly sliced salami
1/2 lb thinly sliced copricola
1/2 lb thinly sliced provolone cheese

Chop olives, vegetables ,parsely together in a food processor. Combine olive oil and lemon juice and seasonings. Split the bread in half lengthwise. Pull out some of the bread and save for another use. Brush both sides with some of the olive oil mixture and combine the rest of the olive oil with the vegetables. Layer the meat on both halves.Cover with slices of cheese. Cover with the olive mixture. Put the 2 halves together and wrap in foil. Place in the fridge under a weight (tomato can etc) for 1 hour.
