Ingredients:  
1/4 cup olive oil
5 clove of garlic – chopped
1 large onion – chopped
1 large chopped green pepper (if desired)
3 lbs peeled fresh tomatos – pureed
3 cans tomato paste – 6 ounce cans
¼ cup fresh parsley – Finely chopped
3 tablespoons fresh basil – finely chopped or 1 tablespoon dried basil
3 tablespoon fresh oregano – finely chopped or 1 table spoon dried basil
Add to taste
1 and ½ teaspoon salt
½ teaspoon pepper
1 teaspoon sugar to cut the acid of the tomato
crushed red pepper

Directions:

Heat olive oil and cook onion and garlic until tender (pinch of salt and pepper here)
Mix in the remaining ingredients

Simmer uncovered for 1 to 1 and ½ hours (I covered with a splatter guard) helps with the cleaning.

I freeze this in 2 - 4 cups servings (2 cups servers 3-4 people easily)
