1 Cup Matzo Cake Meal
1 Tsp Salt
1 Tsp Cream of Tartar
1 Tsp of Baking Soda
1/2 Cup of Brown Sugar
1/2 Cup of Veg. Shortening
3 Eggs separated
3 Cups of Grated Raw Carrots

Directions:
Directions:
Mix dry ingredients, cream sugar and shortening. Beat eggs yolks until lite. Alternately add yolk and dry ingredients to creamed mixture. mix well. Stir in carrots! Fold in stiffly beaten egg whites. Bake in a greased pan at 350º for 40 minutes. Serve hot or cold.
