1-1/2 cups boiling water
Cake:
1 cup quick cooking oats
1 stick butter
1 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1-1/3 cups flour
1/2 teaspoon soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon nutmeg
1 cup firmly packed brown sugar

Frosting:
1 stick melted butter
3/4 cup packed brown sugar
3/4 cup evaporated milk
1 cup shredded coconut
1 cup chopped nuts
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350 degrees
Pour boiling water over oats, butter and granulated sugar
Let stand for 20 minutes
Add eggs, vanilla and dry ingredients to the oat mixture
Stir to blend
Pour into a greased and floured 9X13 pan (PAM baking spray)
Bake 35 minutes
Remove cake and turn on broiler
Mix all the frosting ingredients together and spread over cake
Broil until lightly browned on top, WATCH carefully!

Pap adored his sister Merle though he was not fond of her cooking. This recipe was her "one claim to fame" in the family! Its interesting to note that Pap met Gram over grilled cheese sandwiches at Merle's house:).
