minced Garlic & Garlic Cloves

Directions:
Preheat oven to 325. Place roast fat side up on rack in open roasting pan. Season with garlic salt & pepper by rubbing all over. I also take garlic cloves and cut in half the poke holes in the roast and stick the cloves in all over.

Insert meat thermometer into thickest part of roast, not touching bone or fat.
Do not add water. Do not cover.

Roast in oven until temperature registers 10 degrees below desired doneness. Allow the roast to stand 15-20 minutes before carving so that the juices will be retained in the meat.

Cooking time: About 27 min. per pound for medium (160 degrees) 23 minutes per pound for Rare (140)

To serve carve into 1/2" to 1" slices.
