1 lb pork sausage (or substitute)
2- 15 oz. cans tomato sauce
1- 6 oz. can tomato paste
1/4 c. water
1/2 tbsp. light brown sugar
1-15oz. ricotta cheese
3 c. mozzarella cheese
1 egg
1 tsp. parsley flakes
Parmesan cheese
12 manicotti noodles cooked and drained

Directions:
In large saucepan, brown sausage and drain. Remove 1/2 of sausage and set aside. Stir in tomato sauce, paste, water and brown sugar into sausage. Put a small layer of sauce mixture in pan. Meanwhile, in a medium bowl, combine remaining sausage, ricotta, 2 c. mozzarella, egg and parsley. In 9x13 dish, pour 1/3 of spaghetti sauce mixture. Stuff noodles with ricotta mixture and place on top of sauce. Pour remaining sauce over filled noodles. Top with remaining mozzarella and sprinkle with Parmesan cheese. Bake uncovered at 350º for 20 minutes.
