1 c. (2 sticks) unsalted butter
2 c. sugar
4 eggs
3 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 c. milk
1 tsp. vanilla extract
1/4 c. dark rum

Golden Rum Glaze:
4 T. (1/2 stick) unsalted butter
1 c. sugar
1/2 c. dark rum
3 T. confectioners sugar for finishing

Directions:
Directions:
Preheat oven to 350 degree. Grease and flour a 9 or 10 inch Bundt or tube cake pan. In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating after each addition. Combine flour, baking powder, baking soda, and salt. In another bowl, combine milk, vanilla, and rum. Beat flour mixture and milk mixture into butter in three alternating additions. Pour batter into the prepared pan. Bake one hour, until golden brown, or until a toothpick inserted in center comes out clean.

Glaze: Melt butter in a saucepan over low heat. Stir in sugar and 1/4 c. water and bring to a boil. Lower heat and simmer for five minutes, stirring constantly. Remove from heat and stir in rum. Place cake on serving platter and slowly pour glaze over top and sides until completely absorbed. Dust with confectioners sugar.

This is the perfect cake for the Christmas holiday. Keep it tightly wrapped in foil and refrigerate after a couple of days and it will last a long time. (That is unless someone gets into it in the middle of the night!) This recipe is from Booze Cakes, a very creative little cookbook that I sold in The Drawing Room
