Crumb Crust:
1½ c graham crumbs
¼ c melted butter

Middle:
6 eggs, separated
1½ c sugar
2 pkgs cream cheese (not low fat)
1 tsp cream of tartar
3 tbsp flour
½ tsp salt
2 c sour cream (not low fat)
1 tsp vanilla

Topping:
1 can of pie filling - cherry, raspberry, apple, etc.

Have all ingredients at room temperature!
Make crumb crust. Mix ingredients together, press into 10" springform pan.
Whip egg whites and slowly add cream of tartar. Slowly add 3 tbsp sugar. Beat until stiff and set aside.
Beat cream cheese until soft. Gradually add 1½ c sugar, flour and salt. Continue to beat on low and add one at a time, 6 egg yolks. Add sour cream and vanilla. Mix well. Fold in egg white mixture. DO NOT beat.
Pour over crumb crust.

Bake at 350 for 1 hour 15 min, the turn off oven and let sit in over for 10 more minutes. Remove from oven. Allow to cool completely, then refrigerate.

To serve, remove springfold outer rim. Cut, and top with chosen pie filling.
