1 lb pork shoulder, cut into large pieces
1 chicken breast, cut into large pieces
1 cup vinegar. Tagalog vinegar preferred, but white can be substituted
1 head of garlic, peeled and crushed
2-3 bay leaves
2 T. finely minced, fresh ginger
salt to taste
1/2 t. peppercorns

3 med. onions, sliced or chopped
2 t. turmeric powder
cooking oil

Add meats to a large pan and cover with water until water is one inch above the meat. Add vinegar, half the garlic, bay leaves, ginger, salt, and peppercorns. Bring to a boil; then lower the heat and simmer until the meat is tender.

In a separate pan, heat oil and cook onions and remaining garlic, until the onions are wilted. Brown the chicken pieces. Add onions, garlic, chicken and turmeric to the pork when the pork is tender and continue cooking until the chicken is cooked through.

Serve with lots of cooked white rice.

This recipe won a national contest in the Philippines. The original version calls for adding the chicken to the pork mixture. Then when both are the chicken and pork are cooked, they are removed from the pot, drained and fried in one cup of oil, after which they are returned to the pot. This is no doubt delicious, but time-consuming and less healthy.
