5 or 6 boneless/skinless chicken breasts
or/and canned artichoke hearts packed in water
1 farm fresh egg (Price's Fresh Farm Eggs!)
milk
flour for dipping chicken
canola oil
1/2 stick butter
2 tsp chicken base or 2 chicken bouillon cubes
1/2 c water
lemon juice to taste
cooking sherry or white wine
1 finely chopped clove of garlic
1 tsp parsley
Parmesan cheese
Directions:
Directions:
Pound chicken breast slightly (if you are using artichokes, just drain whole artichokes, cut in half & dip in egg & flour). Mix egg with milk to make an egg wash. Dip chicken breasts in egg wash and then coat with flour. Saute in oil until cooked. Put in an oven proof dish. Put in a 325º oven to keep warm while making sauce.
In a large saute pan, melt butter. Add garlic, parsley, chicken base/bouillon, water bring to a low boil. Add approximately 1 tbsp of lemon juice, 1/4 cup sherry or white wine. Simmer for a few minutes, taste and add additional wine or lemon as needed. Pour sauce over chicken or artichokes and sprinkle with Parmesan cheese!

This is a Rochester, NY dish! Thank you to my brother Paul for this recipe! Paul is famous for this dish and for good reason, he doesn't measure he just creates! So this is as close to his recipe as we can get if we want to make it on our own. His special touch can't be replaced! !
