1 32 oz package frozen peas
1/2 cup chopped leeks or onions
40 spinach leaves
40 lettuce leaves
12 cups chicken broth
1 tsp dried tarragon
1/8 tsp ground pepper
1 cup light cream
2 tbsp butter

Directions:
Directions:
Simmer peas, leeks, spinach, lettuce , tarragon and chicken stock for 20 minutes. Puree in a food processor and pour back into pot. Add cream and butter. Heat through. Serve garnished with croutons
