2 tbsp butter
grated rind 1 lime
juice from 1 lime
1/2 tsp tabasco
3 tbsp brown sugar
1 tsp coriander
1/2 tsp cumin
1/2 tsp powder ginger
2 cloves garlic smashed
1/2 cup dark soy sauce

Directions:
Directions:
In medium fry pan combine all ingredients and bring to boil. Once boiling reduce heat to low and let simmer for 10 minutes to allow the ingredients to blend. Remove from heat and allow to cool in pan. Stir and then pour over selected meat in bowl or zip lock bag. Refrigerate over night and cook on BBQ. Double recipe for large servings.
