1 ⅔ c. all purpose flour
⅔ c. unsweetened cocoa powder
1 ½ tsp. baking soda
1 tsp. salt
5 Tbsp. butter, room temp
3 Tbsp. vegetable shortening
1 c. light brown sugar
1 egg
2 tsp. vanilla
1 c. whole milk

Whoopie Pie Filling:
1 c. butter, room temperature
1 c. light brown sugar, packed
¼ c. granulated sugar
¼ c.+ 2 Tbsp. milk
2 tsp. vanilla
2 c. flour
1 c. mini chocolate chips
Directions:
Directions:
1. Preheat oven to 375°. Line 2 baking sheets with parchment paper.
2. In a bowl sift together flour, cocoa powder, baking soda and salt.
3. In a mixer, cream together butter, shortening and brown sugar until combined. Add egg and vanilla and beat for 2 minutes. Turn mixer to low and add half of the flour/cocoa mixture, then half the milk, repeating until all the ingredients are mixed in.
4. Drop by rounded tablespoon, 2 inches apart onto prepared baking sheets. Bake for 8-10 minutes until centers are set. Cool on pan for 5 minutes and then transfer to wire rack to finish cooling.
5. Meanwhile, for the filling, in a mixer, cream butter and sugars. Add in vanilla and milk. Stir until combined. Slowly add in flour and turn mixer up to medium until mixed well. Fold in chocolate chips.
6. Fill Ziploc or piping bag with cookie dough and pipe onto 1 whoopie pie. Then place 1 whoopie on top to make a sandwich. Enjoy!
