3 eggs
1 C. cooking oil
2 C. sugar
2 C. raw, zucchini, grated
3 tsp. vanilla extract
3 C. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 C. nuts, if desired

Directions:
Beat the eggs. Mix the remaining ingredients into egg mixture and pour mixture into two, well greased, bread pans. Bake at 350º for 50 minutes. This recipe was given to Teresa by her Mother, Beth Myrin.
