1 cup onion - diced
1 cup celery - diced
1 bell pepper - diced
1-2 cloves of garlic - minced
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 4.5 oz jar sliced mushrooms (drained)
1 can of Rotel diced tomatoes
(optional - diced jalapeño peppers for flavor)
1 tsp cumin
1 tsp salt
1 tsp ground black pepper
1 tsp parsley
pinch of Chili powder
pinch of thyme
2 large grilled boneless/skinless chicken breasts - chopped
OR.... 1-2 cans of white chunk chicken drained (easier)
1 can chicken stock
1 pkg corn tortillas
2-3 cups of shredded cheddar cheese
1 small package of pepper jack cheese (shredded)

Saute the onions, celery, bell pepper and garlic

In a separate bowl, mix the soups, mushrooms, spices and chicken. Add sautéed vegetables. Add 1/2 can of the Rotel tomatoes (drained). Stir well. Diced Jalapeño peppers can be added to taste.

Begin layering in a 9x13 casserole pan. Cover the bottom with a layer of the soup mixture. Next add a layer of the tortillas. Dip the tortillas in the chicken stock to add moisture before layering. Next, layer with the soup mix, then a layer of cheese (both kinds), then tortillas again, soup mix, etc. Continue for 3 or so layers until all are used up. Top with the last of the cheese. Sprinkle the other half of the Rotel tomatoes on top for looks.

Bake for 40-45 minutes at 350ºF, uncovered until top is golden. Let rest 10 minutes and serve.

This can be make ahead the morning of, kept covered in the refrigerator covered with foil until time to bake. It does help the flavors blend. Leftovers (if any) can be frozen and reheated.
