1 lb Velveeta
8 oz cream cheese softened
1 small can chopped green chilies
Paprika

Directions:
Press and roll Velveeta between 2 sheets of wax paper until desired size is reached. Don't make it too thin or it will break apart.

Spread cream cheese over Velveeta. Try not to get cream cheese all the way to the edges.

Drain chilis and spread on top of cream cheese.

Fold one long side about 2/3 over,removing wax paper as you go. Fold opposite side over on top so cheese log is 1/3 as wide as before. Turn in edges and press all seams to hold shape.

Put a piece of aluminum foil over cheese log and using the wax paper to help, flip it over onto the foil. Discard wax paper. Dot top with paprika. Wrap in the foil and refrigerate for at least 2 hours.

Unless you have a large crowd who will be eating this, only use half right away and save the other half for another time. Serve with Ritz crackers.

NOTE: You can vary this by adding chopped pecans, jalapeno pepper, chopped black olives, instead of the chilis. Be creative!
