1 8 oz Halibut Fillet
˝ cup soy sauce
˝ cup all purpose flour
2 tbs black sesame seeds
2 tbs white sesame seeds
1-˝ tbs butter or other cooking oil ( I prefer pure olive oil)
2 tbs commercial sesame ginger vinaigrette (or make your own - see recipe in the salad dressings section :))

Snow Pea Carrot Saute:
˝ carrot julienned
˝ cup cleaned snow peas
1 tbsp minced fresh ginger
salt & pepper to taste
1 tbs clarified butter or oil

Cook Fish:

Preheat oven to 375 degrees - place baking dish in oven to prepare for halibut.

Soak fillet in soy sauce for about 10 minutes. Soaking longer will produce salty fish and it will be less desirable.....meaning it will suck!

Take wet fillet and lay in flour/sesame seed mixture, turning and pressing into mixture firmly to coat fillet.

Place encrusted fillet in a hot skillet with butter or oil.

Cook on each side for about 2 minutes. Transfer fillets from the skillet to he heated backing dish. Bake for 10-12 minutes. Remove from oven and drizzle a little vinaigrette on top.

Snow Pea Carrot Sauté:
In a hot stainless skillet or wok, heat butter or oil then add ginger, cook for 30 seconds.

Toss in carrots, cook for 1 minute, then add snow peas.

Cook for another minute, season with salt & pepper, serve as a bed for fish.
