1 tablespoon Garlic cooking oil
2 medium onions, finely chopped
1 bell pepper, finely chopped
2 celery stalks, finely chopped
3 garlic cloves, finely chopped
4 pounds coarse ground round steak (lean chili grind)
2 pounds breakfast sausage links, sliced same as thickness
1 No. 2 (29oz) can Hunts tomato sauce
1 No. 2 (29oz) can Hunts stewed tomatoes
1 Cup water
1 6 ounce can Hunts tomato paste
1 10 ounce can Rotel Chili Fixins
1 4 ounce can diced Jalapeño’
1 1 ounce bottle chile powder
1 4 ounce can green diced chile
dash of oregano
salt to taste (approximately 3 tablespoons)
pepper (course ground) to taste
garlic salt to taste

Optional:
2 16 ounce cans of Dark Kidney Beans, for those who need a little extra gas.

Directions:
Put oil in a 5-6 quart pot. Add onion, bell pepper, celery and garlic cloves. Cook until onion is transparent. Add sausage and stir until brown. Add round steak gradually, stirring until the redness disappears. Add the remaining ingredients, stirring after each addition.
Lower heat and simmer 2½-3 hours. Stir frequently to prevent scorching.
