"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
1/4 cup oil
1 tbsp dried onion flakes
1 tsp garlic flakes
1 cup ketchup
3/4 water
1 tbsp cider vinegar
2 tbsp Worcestershire sauce
1 tbsp molasses
2 tsp brown sugar
1 tsp mustard powder

Put oil in a saucepan with onion flakes and garlic & cook gently for 2-3 minutes to brown lightly - do not allow to burn. Add remaining ingredients, mixing the brown sugar with the mustard to break up lumps before adding to the pan. Bring to a simmer and simmer gently, uncovered, for 10 minutes, stirring occasionally. Cool and store in a sealed jar for up to 1 month. Makes 2 cups.
