1 c crushed graham crackers (about 7 whole)
3/4 c crushed ginger snaps
3/4 c sugar, divided
1/4 c butter, melted
2/3 c chopped pecans
1 14 oz pkg caramels
2/3 c evaporated milk
2 8 oz pkgs cream cheese, softened
2 tbsp flour, divided
2 farm fresh eggs, beaten (Preferably from the Price Farm!)
1 1/2 c chopped peeled apples (James Kirby Farms are the best!)
1/2 tsp ground cinnamon
1/2 tsp vanilla

Crust: Wrap outside of bottom of 9" springform pan with dbl foil securely. In bowl, mix g. cracker crumbs, 1/2 c crushed g. snaps, 1/4 c sugar & butter. Press into greased springfoam pan and bake 350º for 10 min. Cool on wire rack.

In a heavy saucepan, melt caramels & evaporated milk over medium heat until melted. Pour 1 c over crust. Top with half of pecans.

Beat cream cheese, 1 tbsp flour, vanilla, remaining sugar until smooth. Add eggs until combined. Fold in apples. Pour into crust. Place springfoam pan into large pan, add 1' hot water. Bake 40 min. Carefully pour remaining caramel & sprinkle with remaining pecans. Bake 10-15 min until center is set.

Cool on wire rack for 10 min, run a knife around edges. Refrigerate overnight, remove from pan.

Words can not describe how delicious this is!!! I removed the pan after it cooled then refrigerated it and had it for dessert that night!!! This is definitely a keeper!!! Open caramels before you start the recipe. It takes a while:)) Enjoy as I know you will!!!!
