2 eggs
1 c. sugar
¼ c. butter flavored shortening
¼ c. softened butter
4 ripe bananas, pureed
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 pinch salt
½ c. chopped walnuts (optional)

Directions:
Directions:
Beat eggs then add sugar. Cream in shortening and butter. Add pureed bananas and vanilla and mix. Fold in dry ingredients and add walnuts if desired. Grease and flour 5 mini loaf pans. Bake at 350º for 20 - 25 minutes (Leave tip of toothpick gooey)
