1 single shell pie crust
½ pound cooked crumbled Italian sausage
1 tablespoon diced onion
½ pound sliced mushrooms (optional)
1 thawed Stouffer’s spinach soufflé (in the Stouffers frozen dinner section in grocery)
2 eggs, beaten
1 Tablespoon milk
½ teaspoon each salt and pepper
½ - 1 cup shredded Swiss cheese (depending on how cheesy you like it)

Directions:
Directions:
Preheat oven to 375 degrees. Brown the sausage in a medium sized non-stick skillet; add onion and cook until onion is soft. Cool. In a medium-large mixing bowl, mix the thawed soufflé, beaten eggs, milk, salt and pepper. Stir in the sausage and onions, and mushrooms. Stir in the shredded Swiss cheese. Pour into pie shell and smooth on top. Bake for 25 – 30 minutes or until a knife inserted into the middle comes out clean (or close) - let sit 15 minutes before cutting and it will continue to become more firm as it sits.

You can vary this by adding diced ham or bacon instead of sausage.
