1 pound macaroni
2 cups heavy cream
3 cups whole milk
12 oz. cheddar cheese
4 oz. Parmesan cheese
3 tbsp flour
1 tbsp sea salt
1 pound bacon, cooked (optional)
1/2 - 1 cup grated Romano cheese to top

Directions:
Directions:
Preheat oven to 400.

Cook pasta in salty water until al dente, toss with olive oil to prevent sticking, and set aside.

Shred cheeses and toss lightly with flour to coat. Heat cream and milk to scalding. Add cheese in batches, stirring until all is melted. Cook on medium-low heat, continuing to stir until it bubbles for 5-10 minutes and flour is cooked (it will look a little loose).

Taste for seasoning (should be just slightly salty). Combine pasta and cheese (and optional bacon) and put in a baking dish. Sprinkle the Romano over the top and cook for 15 minutes, until top is browned and cheese is bubbly.

Pull from oven and let cool for 15 minutes.
