"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 1/2 cups elbow pasta
4 cups whole milk
1 jar Old English cheese (found in dairy aisle)
or 4-6 oz shredded cheddar
flour
1 1/2 sticks butter
bread crumbs
salt and pepper

Directions:
Directions:
Preheat oven to 375. Melt 1 stick of butter in a small bowl in the micro. Add flour by teaspoonful to make a paste and set aside. In a sauce pan, heat milk on medium. While milk is warming, boil pasta only 1/2 of the recommended cooking time, drain, and add pasta and 1/2 stick of butter in casserole dish and set aside. Turn up the milk a bit and start to add flour/butter paste by the spoonful, whisking it in until it starts to thicken. Add cheese last, a little at a time, until it's all melted. Pour cheese mixture on top of pasta and mix until combined well. It should be soupy. Top with bread crumbs, salt and pepper. Cover and bake for 1/2 hour. Uncover and put under the broiler until top is brown and bubbling.
