2 Tbsp. olive or canola oil
2 pounds of red potatoes cut up
1 Tbsp. finely chopped green onion
4 garlic cloves, minced
1 tsp. dried thyme
1 tsp. dried rosemary, crushed
1/8 tsp. ground nutmeg
1/4 cup balsamic vinegar
3/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In a large skillet, heat oil over medium-high heat. Add the potatoes, onion and garlic. Toss to combine. Ad the thyme, rosemary and nutmeg; toss well. Cook and stir for 2-3 minutes or until potatoes are hot.
Transfer to a baking pan coated with cooking spray (or margarine). Bake at 400 degrees for 25-30 minutes or until potatoes are golden. Add the vinegar, salt and pepper. Toss. Bake for 5-8 minutes longer or until potatoes are tender.
