3/4 c. (1 1/2 sticks) butter
1 1/2 c. firmly packed light brown sugar
2 T. water
12 oz. pkg. semi-sweet chocolate chips
2 eggs
2 1/2 c. flour
1 1/4 tsp. baking soda
1/2 tsp. salt
1 lb. Andes mints or a mint wafer
chocolate sprinkles

Directions:
Directions:
Place butter, sugar, and water in a saucepan on low heat until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat. Continue to stir until chocolate is completely melted. Pour into a large mixing bowl and let stand about 10 mins. to cool slightly. With mixer beat in eggs one at a time. Reduce speed to low and add combined dry ingredients, beating until blended. Chill dough about 1 hr. Preheat oven to 350. Roll dough into teaspoon sized balls and bake 11-13 mins. Immediately place mint on top of each cookie. Allow to soften then swirl mint over cookies and decorate with sprinkles.
