Cookie Crust:
1 c. flour
1/2 c. butter
1/4 c. confectioners sugar
Lemon Topping:
2 eggs
1 c. sugar
1/2 tsp/ baking powder
1/4 tsp. salt
2 tbl. lemon juice
Directions:
Directions:
Preheat oven to 350 degrees.
Cookie Crust: Blend flour, softened butter and confectioners sugar. Press evenly into 8 x 8" pan and bake 20 minutes.
Lemon Topping: Beat eggs lightly. Add in other ingredients and beat together. Remove crust from oven and pour lemon topping over crust. Bake for 25 minutes more and let cool. Before serving, sprinkle with confectioners sugar (use a strainer to dust the top). Cool and cut into squares.
