1 package refrigerated pizza crust
1 tablespoon plus 1 teaspoon vegetable oil, divided
2 garlic cloves, pressed
4 ounces cheddar cheese, grated
4 ounces mozzarella cheese, grated
1 ounce Parmesan cheese grated
1 teaspoon Italian seasoning
1 small onion
2 plum tomatoes
1 medium zucchini
1 cup mushrooms

You can also add green or red peppers,

Directions:
Preheat oven to 400º and lightly brush 1 teaspoon of the oil over a large bar pan using a basing brush. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom.. Place remaining oil in a small bowl and press garlic into oil using a garlic press. brush evenly over dough. Bake Crust for 7 minutes.

Add grated cheese with Italian seasoning and toss lightly, set aside. Slice onion, tomatoes, and zucchini.

Once dough is removed from over sprinkle half of the cheese mixture evenly over crust, layer evenly onion, zucchini, tomatoes and mushrooms. Sprinkle with remaining cheese and Bake for 14 - 18 minutes or until crust is golden brown, Serve while hot.
