Ingredients:  
2 cups wheat (burghul)—medium or fine
2 large bunches of parsley, large stems removed and finely chopped
1 cup mint leaves (fresh or I tbsp. dried)
2 bunches of green onions, chopped
5 tomatoes, cut into small dice
1 cup lemon juice (approximately 4 lemons)
1/2-3/4 cup olive oil
2 t salt and 1 t pepper, or to taste
1 can chick peas, drained (optional)

Directions:

Wash and soak wheat for about ten minutes. Squeeze water from wheat and add vegetables. Mix well. Add lemonjuice, oil, salt and pepper and mix well. Add chick peas, if using.

Serve with lettuce, grape leaves, or cooked cabbage leaves.

My mother used to add 1 scant t. sugar to the mix, but this is not usual.
