15 oz. container ricotta cheese
1 tsp. Italian Seasoning
1 tsp. garlic powder
1 egg
1 (10 oz) pkg. frozen, chopped spinach; thawed and drained
1 lb. Italian sausage
8 oz. sliced mushrooms
1 medium onion, chopped
32 oz jar spaghetti sauce
16 oz pkg. lasagna noodles
1 lb. Italian cheese mix, grated
½ - ¾ c. water

1. Mix together ricotta cheese, Italian season, and garlic powder. Beat in egg. Add spinach to cheese mixture and mix well. Set aside.
2. Heat large Dutch oven over medium-high heat. Brown Italian sausage until mostly cooked. Drain excess fat. Add onions and sauté until onions have softened. Add mushrooms and cook for a few more minutes. Add spaghetti sauce and bring to a boil. Reduce heat to low and simmer for 10 minutes.
3. Once sauce is done, spread a thin layer of sauce in a 9x13 glass baking dish. Layer with ⅓ of dry noodles, ⅓ of ricotta cheese mixture, and ¼ of grated cheese. Pour ⅓ of remaining spaghetti sauce over all. Repeat layers 2 more times, ending with grated cheese. Set aside 60-75 minutes before baking.
4. When read to bake, pour water around edges. Bake at 325° for 1 hour. Let stand in warm place 10-15 minutes before serving.
*Because the lasagna noodles have been able to sit in the warm sauce I use ½ c. of water.
