3 c. grated carrots
4 eggs
1 1/2 c. salad oil
2 c. white sugar
2 c. self-rising flour
1 c. chopped walnuts (black)
1 tsp. vanilla
1/4 tsp. walnut extract
1 tsp. cinnamon

Directions:
Directions:
Mix oil and sugar, add eggs one at a time. Add dry ingredients to oil and mix all together until smooth. Pour into greased tube pan with removable bottom. Bake 1 1/2 hours at 350º. Remove from oven and glaze while still hot,


GLAZE:
1/2 c. buttermilk
1 c. sugar
1/2 tsp. soda
1 Tbsp. corn syrup
Blend well. Pour uncooked glaze on top of hot cake in pan.
Let stand 1 hour.
Remove from pan.
Remove from tube by wide spatulas

When Mimi was just a toddler, Aunt Connie was running Uncle Sprigg's insurance debit while he was serving in WWII. I spent summers helping Aunt Mary care for Mimi. It's what we did.ilb
