Sweet Potatoes

4 - 5 medium to large sweet potatoes ( cooked and chopped and mixed with electric mixer until smooth.)
1 stick butter
1 can evaporated milk
1 cup of brown sugar ( you can use less or more sugar to taste)
2 eggs
1 teaspoon vanilla
You can also use pumpkin pie spice or cinnamon


Topping

1 stick butter
1 cup chopped pecans
1/2 cup brown sugar
3 cups corn flakes

Directions:
Directions:
Bake in a 9 X 13 casserole pan for 40 - 45 at 400º until set.

For topping

Mix all ingredients and smooth on top of sweet potatoes. Bake at 400º an additional 15 minutes or until sugar melts and topping in starting to brown.
