10 Medium Potatoes, peeled (pounds)
1-1/2 cups real mayonnaise
1-1/2 tablespoon balsamic vinegar
1-1/2 tablespoon yellow mustard
1-1/2 1 tablespoon horseradish
1/4 teaspoon pepper
1 cup green onions, chopped (place onion on side for girls)
1/2 cup real bacon (chopped then cooked)
1 tablespoon bacon grease
2 medium celery stalks, chopped (1 cup)
celery salt (covers top)
4 hard cooked eggs, chopped
salt to taste
paprika for color

Heat 1 inch water (salt if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 30 - 35 minutes or until tender; drain. Cool slightly; cut into cubes.

Mix mayonnaise, vinegar mustard, salt and pepper in large glass bowl. Add potatoes, celery and onion; toss. Stir in eggs. Sprinkle top with paprika. Cover and refrigerate at least 4 hours until chilled.
