Tomato Sauce Ingredients:
1-1/2 lbs. lean ground beef
2 cloves garlic, minced
1 medium size onion, chopped
1 (28 oz.) can Italian plum tomatoes (regular tomatoes are OK)
1 (12 oz.) can tomato paste
1 (15 oz.) can tomato sauce
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. dried thyme
pinch of rubbed sage
1 tsp. salt
1/4 tsp. pepper
few dashes hot sauce

Lasagna:
1- 16 oz. pkg. lasagna noodles
1/2 cup grated cheddar cheese
2 cups Ricotta or cottage cheese
1 (8 oz.) pkg. mozzarella cheese, diced
3/4 cup Parmesan cheese (grated)

To cook tomato sauce: (Make this first)
Brown the hamburger in a large skillet; add garlic and onion and cook until lightly browned. Add tomatoes, tomato sauce, tomato paste, basil, oregano, thyme, sage, salt and pepper and hot sauce. Cover and simmer over low heat for about an hour.
This recipe makes quite a thick sauce, If thinner sauce is desired, thin with a little water, tomato juice or ketchup,
Can be assembled and frozen. Thaw completely before heating.

Cook lasagna noodles in boiling salted water for 12 minutes or until tender. add a few drops of oil or a dollop of margarine to the water to keep from boiling over.
Rinse and drain.
Arrange a single layer of noodles in the bottom of a 3-quart shallow baking dish sprayed with Pam. Add a sprinkling of Parmesan, spoonfuls of ricotta, pieces of mozzarella and some of the tomato sauce.
Repeat layers until all ingredients are used.
Sprinkle grated cheddar on top.
Heat oven to 350º. Bake for 30-45 minutes until sauce is bubbly.

Maxine made two casseroles of this recipe, but used shallow square or rectangular dishes).

Recipe serves 6-8 people, generously.
