1/4 cup cold water
1 1/4 cup boiling water
1/2 - 3/4 cup sugar
1 large lemon, rind and juice
1 egg (or 2 for richer)
4 T. cornstarch
1/2 tsp. salt
1 prepared, cooked pie crust.

Directions:
Directions:
Mix cornstarch and cold water.
Add boiling water and cook until thickened.
Add sugar and stir until dissolved.
Add egg yolk, rind and lemon juice (mixed together.)
Cook 3 minutes longer.
Top with meringue.

Grace's note: There is no meringue recipe on the card, but basically, beat the egg whites until stiff, add a little sugar while beating, and for extra stiffness you can add a pinch of cream of tartar. Spread evenly over pie, forming peaks.
Place in a hot oven until just lightly browned. Cool before serving.
