1/4 cup pine nuts
2 cloves garlic, peeled
1 cup water
1/4 tsp. salt
1 tsp. Dijon mustard
2 tbsp. white wine vinegar
1/2 cup olive oil
romaine lettuce torn
1/4 cup shredded Parmesan cheese
pepper to taste

Directions:
Directions:
Toast pine nuts in skillet on top of stove over medium low being careful not to burn.

Boil garlic cloves in water for 10 minutes. Drain and place in large salad bowl. Mash cloves with salt into a paste. Whisk in Dijon mustard and vinegar. Add oil and whisk till emulsified. Add lettuce, pepper, cheese, and pine nuts. Toss and serve.
