1 pint boiling water
1 level tsp. salt
1-1/4 cups plain corn meal

Directions:

Add salt to boiling water. Gradually mix in meal. Set in refrigerator for approximately 20 minutes or until chilled and firm.
Place one inch of shortening in a skillet....fry at 350º, approximately 5 minutes or until golden brown.

Nero's Cactus Canyon was a famous Green Hills restaurant on Hillsboro Road from 1962-1976. They were famous especially for their white bean soup and scalded corn cakes. I believe one of the descendants of the original owner now has a restaurant in that location called Nero's Grill.
