11/4 cups sugar
1/2 cup cornstarch
yolks of 4 large eggs
2 cups water
1 1/2 tsp. grated fresh lemon peel
1/2 cup fresh lemon juice
3 tbsp. cold stick butter (cut small)
Meringue:
Whites of 3 large eggs
1/4 tsp. cream of tartar
1/2 cup sugar

Directions:
Directions:
Whisk sugar & cornstarch in medium sauce pan, whisk in yolks until smooth. Stir in water with wooden spoon. Place over medium heat. Stir until comes to a full boil. boil, stirring 1 min. or until filling is translucent and thick. Remove from heat, add peel, juice and butter. Stir until butter melts. Pour hot filling into pie shell.
Meringue:
Beat egg whites and cream of tartar with mixer on medium speed until soft peaks form on lifted beaters. Beat in sugar 1 tbsp. at a time until all dissolves, beat after each addition. Beat 2 min. longer until stiff peaks form. Bake at 350º for 20 min.
