Cookies:
1 c. sugar
2/3 c. shortening
3 c. flour
3 tsp. baking powder
1/2 tsp. salt
2 eggs
1/3 c. milk
1 tsp. vanilla extract

Date Filling:
1/2 lb. chopped dates
1/2 c. water
1/4 c. sugar
1/4 c. raisins (optional)

Jam Filling:
Homemade jam of your choice (1 T. for each cookie)

Directions:
Directions:
Combine dry ingredients in bowl. Cut in shortening. Add wet ingredients and mix until well combined.

Roll dough out on floured surface. By hand - no rolling pin to keep them just like grandma's.

Cut 4-inch circles and place on cookie sheet. Add filling of your choice to center of cookie.

Before placing additional cookie circle on top of cookie with filling, poke holes in top of each cookie with fork. Place that circle cookie on top and gently press around edges to seal.

Bake at 350 for 10-12 minutes.

Date Filling:
Mix all ingredients in a small sauce pot. Cook mixture on medium heat until it starts to thicken. The filling should be close to jam consistency (not watery) when done.
