1 c chopped dates (easier to cut if chilled)
1 tsp baking soda
1 c very hot water, almost boiling
1 tbsp butter
1 egg
1 c sugar
1 c flour
1 c chopped nuts.
1 vanilla cooked pudding (3 1/2 oz size), prepared and cooled
1 butterscotch cooked pudding (3 1/2 oz size), prepared and cooled
1 large frozen cool whip
or 2 half pints of whipping cream, whipped

Directions:

Put dates, baking soda, and hot water in a bowl, stir and let stand till cool. Then add butter, egg, sugar, flour and nuts and mix well. Spread in a greased and floured 9x13" pan. Bake 350º for 40 minutes. Cake can be made 3-4 days ahead of time, sealed and saved.

To assemble, cut or break cake into 1/2" pieces. Cook pudding using one box of each vanilla and butterscotch. Cook as directed on the package. Cool and beat till frothy using 1/2 of a large frozen cool whip that is defrosted (or 2 half pints of whipping cream that is whipped). Fold into the frothy pudding mix. Alternately place layers of the pudding mix and cut up cake in a clear glass bowl - ending with a few cake pieces on top. Cover and refrigerate till served.
