Canola cooking spray
4 slices of cooked bacon or turkey bacon, crumbled
2 vine ripened tomatoes finely chopped
1/2 onion finely chopped
3 oz. shredded Swiss cheese (about 3/4 cup)
2 Tbsp. of mayonnaise
6 Tbsp. of sour cream
2 Tbsp. chopped fresh basil
16 oz. can of buttermilk biscuit dough (such as Grands)

Preheat oven to 375º. Lightly coat a non-stick mini muffin pan with Canola spray
Combine bacon pieces, tomato, onion, Swiss cheese, mayonnaise, sour cream and basil in a medium bowl. Stir well.
Cut each biscuit into 4 quarters. Press each quarter into a cup of the mini muffin pan. This is the crust. (you will have 32 quarters of dough)
Fill each mini biscuit crust with tomato, bacon mixture.
Bake at 375 until golden brown, about 10 min.
Serve warm.
