2 tablespoons olive oil
2 cup chopped onion
2 cup of yellow and red bell pepper
1 teaspoons minced garlic
5 1/2 cups diced peeled eggplant
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (large) tomatoes

Directions:
Directions:
Heat oil in a large skillet over medium heat. Add onion and bell peppers and saute for 3 minutes. Add garlic and saute for 3 minutes. Add garlic and saute 1 minute. Add eggplant, salt, pepper and tomatoes. Stir, cover and reduce heat and simmer 5 minutes.

Makes 12 servings.
