1 box Duncan Hines butter cake mix
4 eggs
1 stick butter
2/3 cup water

Caramel Icing:
3 cups sugar
1 cup Pet milk
1/4 tsp. salt
1 tsp. vanilla
1 stick butter

Directions:
Directions:
Follow package directions for cake. Allow to cool.

In the top of a double boiler, mix 2-1/2 cups of the sugar with the Pet milk. add salt. Boil for 3 minutes, stirring the entire time. Remove from heat.
Pour 1/2 cup sugar into a black-iron skillet and caramelize it. To caramelize is to melt the sugar over medium heat, stirring constantly until the syrup turns a golden brown. This can burn, so be careful.
Pour the milk mixture into the skillet, mix well, and transfer it back into the double boiler. Add butter and vanilla. Put the top of the double boiler in a cold water bath and stir the mixture until cold and thick, Spread on cake.

I got this recipe from an old book entitled "Being Dead Is No Excuse". This caramel icing is well worth the time it takes to make.
