2 English cucumbers
1 medium to large onion, thinly sliced (sweet onion preferred)
2/3 cup white vinegar
2/3 cup water
4 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper


Directions:
Directions:
1. Heat sugar and vinegar until it boils and turns clear. Stir continuously, let it cool.
2. Peel cucumbers and cut into thin slices.
3. Slice onion thin.
4. Combine and season with salt, mix well.
5. Let stand for 1 hour, stirring occasionally. It will become watery.
6. Rinse well in cold water 3 or 4 times, then drain. Put in bowl and add the sugar and vinegar mixture. Add thinly sliced green/red pepper if desired.
7. Refrigerate until cold.
