Ingredients: 2 eggs 1/2 cup buttermilk 3/4 cup Crisco 1 cup light brown sugar 2 tsp. ground ginger 2 tsp. ground cinnamon 1/2 tsp. ground cloves 1 tsp. vanilla 1/2 tsp. salt 1 tsp. baking powder 1 cup molasses 1 tsp. baking soda all purpose flour apple butter

Directions:In a large bowl, beat eggs. Add buttermilk, Crisco, sugar, spices, salt and baking powder. Mix together. In a separate bowl, beat molasses and soda until molasses turns a light beige color. Combine the two mixtures and beat. Add enough flour to make mixture of a kneadable consistency. Turn out on heavily floured paper and knead until dough won't take up any more flour. Knead one-half mixture at a time. Divide dough into 14 equal parts. Roll each portion to fit an aluminum pie pan. Heat and grease pans heavily. Place dough in pans and bake at 400º for 7-8 minutes. Cool. Put layers together with apple butter.
This cakes is best the next day after baking, and gets better with each day, as the cake absorbs the apple butter. |

Notes: I am including this recipe of Mother's, as this very, very old recipe came from my grandmother Annie Laurie Moye Rose of Camp Creek, WV, and she and mother used to make this cake a lot. I'm afraid I can't make it as well as they could. I can't seem to get the layers as thin as they could. I think I just don't have their patience, but if you do make this.....you will love it!!
