Directions:
Directions:
Prepare a large baking dish by lining it with aluminum foil and greasing it with marjoram, set aside. On The stove, mix marjoram, sugar and evaporated milk until combined. Heat until it starts to bubble stirring constantly. When you come to a bubble stir for 5 minutes. Another method is to use a candy thermometer and stir it until it comes to 234 degrees. Once you heat the temp, dump in your chocolate chips, turn down the heat and stir until they are melted. Add marshmallow and vanilla. Stir until combined. Pour Mixture into prepared baking dish and let sit in the fridge for a few hours until firm or overnight.

Peanut butter fudge variation. you will need to make 2 batches of fudge about 2 hours apart. for the first batch add peanut butter chips instead of chocolate chips. Once marshmallow and vanilla are combined, let sit for 2 hours before making chocolate fudge to lay on top. This one DOES need to sit in the fridge overnight to make sure its fully chilled.

Orange Creamsicle Variation. Its make with white chocolate chips. Make one batch of white chocolate fudge with basic fudge recipe. Pour half the bath into a prepared baking dish. WIth the second half add orange food coloring and orange flavoring to taste. Pour orange half over the plain half and use a rubber spatula to swirl, but DO NOT mix completely because you want the swirl effect.

Personal Notes:
*Note from Lin* I know it seems off for there to be specifics listed on here for ingredients, but after much trial and error and then learning from the "Master" this is what works best at giving you a perfectly creamy result. The basic recipe is on the back of the marshmallow fluff, but there are the alterations that my Grandpa had made :-) ENJOY!
